Ukdiche Modak

Try this exquisite recipe by Devashri Bagul @baguldevashri (Palghar, Maharashtra).

Ingredients:
For making outer pari
1 or 1/2 cup Rice flour
1 cup water
1/2 cup milk
3 tsp Ghee
2 pinch salt.
For inner filling of modak
2 cup fresh grated coconut
1 cup grated jaggary/gud
3-4 cardamom powder
1/2 tsp nutmeg powder
3 tsp ghee

PROCESS:

Step 1: take a pan add 3 tsp ghee, add grated coconut and fry it slightly. Add Jaggery, mix it. When it melts turn off flame. Add cardamom and nutmeg powder mix it well. Let it cool down.

Step 2: Take a pan add water, milk, ghee, salt together let it boil. When it boils add rice flour and immediately stir it otherwise lumps will be formed. Mix it well and cover with lid.

Step 3: Smash rice dough when hot. I have made three portion and added food color. You can also make it only with white batter. Make modak in modak mold.

Step 4: Fill coconut batter in this modak. Cover with rice batter and demold that modak.

Step 5: Dip in little water so that it does not crack while steaming. Place it in plate.

Step 6: Boil water in steamer. Place this plate in steamer and steam modak for 15-20 min on low medium flame.

Step7: Remove from steamer and then serve it with ghee.
